==Ingredients ==

  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup mashed bananas (about 4-5 bananas)
  • 1 tsp vanilla
  • 2 cups cake flour
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 cup chopped walnuts
  • 1 cup of mixed sultanas (optional)
  1. Preheat oven to 350ºF.
  2. In one bowl, mix together 1/2 cup of Crisco, 1 and 1/2 cups of sugar, and 2 beaten eggs.
  3. Add the following ingredients: one cup mashed bananas, 1 cup milk, and 1 teaspoon of vanilla.
  4. In a different bowl, sift together 2 cups of flour, 2 teaspoons baking powder, 1 teaspoon baking soda, and 1/4 teaspoon salt. Gradually add all of this to Step 2.
  5. Grease two 8 inch round cake pans with butter and flour.
  6. Fill both pans equally with batter; make sure it is level and without air pockets.
  7. Bake cake for 35 minutes, or until golden brown.
  1. In a sauce pan, add 1 cup of milk and 3 level tablespoons of flour and 1/4 cup of sugar.
  2. Bring to boil over low-medium heat.
  3. Stir until smooth.
  4. Cool completely.
  5. Cream together 1/2 cup sugar and 1/2 cup of Crisco.
  6. Add teaspoon of vanilla.
  7. When flour/milk mixture is cool, mix together at high speed until creamy. At first may appear curdled but will clear up as it is beaten.

Warnings

  • Over mixing will result in the cake not rising.
  • Icing the cake while the cake is warm will cause the icing to run or cause the cake to fall apart.
  • If the flour and milk mixture isn’t stirred constantly, it will get lumpy very quickly.
